The Struggle is Real
Like many work at home moms, I struggle to eat healthy. It’s not that I don’t like healthy food, I just don’t have time. I am either working feverishly, driving teens around to work or wrangling kids up. Lately it’s more about how fast I can get the two youngest out of the house before they seek and destroy any clean corner available. So in this busy life, I tend to do what’s easiest stop and pick up food. I try really hard to make sure it’s something “healthy”. Because, ya know, lettuce wrapped processed meat is so much healthier than a burger, right? A few weeks ago I joined a gym though, and in my attempt to not only make it there, I had to remember that the real work is in the kitchen. I made a silent promise to myself to attempt to eat clean 80% of the time.
Salads Are Not Quick
Lets just be real for a minute. I love food. And the truth about a salad is that it gets old real quick. Chicken one day, eggs the next, sunflower seeds, pumpkin seeds. So many ways to give it variety but at the end of the day it’s still a salad. Blah. Not to mention making a salad takes about as long as it does for my four year old to notice I’m busy measuring containers and counting calories. So the time it took me to make that healthy creation also cost me another 30 minutes in cleaning up whatever creation he made with my makeup or putting every single DVD back in its correct case. I need something a bit more easy and quick. Not to mention hearty and that won’t leave me feeling like a frail rabbit.
Cucumber Tomato Salad: Simple but Yummy
Cucumber Tomato Salad is actually not a salad at all. I just couldn’t think of another name for it. I used to make this back in high school. It was the “cool thing” to bring your lunch then. And I used to bring the weirdest things. Cottage cheese and avocados one day, cucumbers and tomatoes the next. No wonder I had a six-pack of abs and legs the size of toothpicks. I also had a metabolism that Jessie Owens probably couldn’t keep up with. Time to stop living in the past and get back to the point. Clean eating 80% of the time and food that is quick and healthy. Ok, all you need to make this is a cucumber, a tomato or two, shredded parmesan cheese if you want, a pack of whole wheat pita and any brand of Italian dressing. If you want to get really healthy you can use your own version of whatever clean, healthy dressing recipe. But this is 80/20 so…. I’m gonna give myself some slack and just use the bottled dressing.
Chop Chop-Times a Wastin’
Seriously, it’s a no brainer guys. Peel and chop the cucumber, cut the tomato up, throw it in a bowl, sprinkle some parmesan cheese on it, pour a small amount of dressing over it and mix. If you feel like you need more dressing, add a bit more until you feel like your veggies are coated well. Some dressings can be really strong so less is more with Italian dressing. Open up 1/2 of the pita and scoop some in. I find that one whole pita cut in half is more than enough to feed me lunch. If I’m hungry after I will maybe pick at a few more bites of just the cucumber and tomato. It’s seriously that easy. It takes me about ten minutes from start to eating.
Kids and Lids
If your kids aren’t picky eaters and are open to eating what you eat, serve some in a bowl and give them a plain pita. If they are not all for cucumbers and tomatoes then put a lid on it and you have lunch ready to go for tomorrow. One cucumber and 2 tomatoes can make about 3 lunches for me.
